La placer sur une plaque recouverte de papier de cuisson (ou d&rsquo;un tapis de cuisson <a href=\"https:\/\/chefpastry.ch\/de\/produkt\/tapis-silicone-silikomart-cuisson-air-mat\/\">Airmat<\/a>).<\/p>\n\n\n\n<p>Enfourner pendant environ 20 minutes, jusqu&rsquo;\u00e0 ce que la p\u00e2te soit bien dor\u00e9e.<\/p>\n\n\n\n<p>Laisser ti\u00e9dir sur une grille (toujours avec le moule) puis d\u00e9mouler.  <\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-creme-citron-basilic\">Cr\u00e8me citron basilic<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1.2 g g\u00e9latine<\/li>\n\n\n\n<li>1 zeste de citron jaune<\/li>\n\n\n\n<li>75 g sucre<\/li>\n\n\n\n<li>75 g jus de citron jaune (1 citron jaune)<\/li>\n\n\n\n<li>100 g \u0153ufs (2 \u0153ufs)<\/li>\n\n\n\n<li>100 g farine<\/li>\n\n\n\n<li>5 g ma\u00efzena (1\/2 cs)<\/li>\n\n\n\n<li>75 g beurre<\/li>\n\n\n\n<li>10 feuilles de basilic<\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<p>Faire ramollir la feuille de g\u00e9latine dans un bol d&rsquo;eau froide.<\/p>\n\n\n\n<p>Laver le citron, zester et m\u00e9langer avec le sucre.<\/p>\n\n\n\n<p>Presser le jus de citron puis le faire chauffer dans une casserole.<\/p>\n\n\n\n<p>Battre les \u0153ufs avec le sucre, la farine et la ma\u00efzena.<\/p>\n\n\n\n<p>Lorsque le jus de citron commence \u00e0 fr\u00e9mir, en verser une partie sur le m\u00e9lange \u0153ufs en remuant vivement.<\/p>\n\n\n\n<p>Verser le m\u00e9lange dans la casserole puis faire \u00e9paissir la cr\u00e8me \u00e0 feu doux, sans cesser de m\u00e9langer \u00e0 l&rsquo;aide d&rsquo;un fouet.<\/p>\n\n\n\n<p>D\u00e8s que la cr\u00e8me a \u00e9paissi, ajouter la feuille de g\u00e9latine essor\u00e9e, puis m\u00e9langer.<\/p>\n\n\n\n<p>Incorporer le beurre en morceaux.<\/p>\n\n\n\n<p>Ciseler le basilic (garder quelques feuilles pour la d\u00e9coration) et l&rsquo;ajouter \u00e0 la cr\u00e8me citron.<\/p>\n\n\n\n<p>Placer la cr\u00e8me dans une poche \u00e0 douille munie d&rsquo;une douille lisse de 14 mm.<\/p>\n\n\n\n<p>R\u00e9server au frais.<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-confit-de-fraises\">Confit de fraises<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>80 g pur\u00e9e de fraises<\/li>\n\n\n\n<li>10 g sucre<\/li>\n\n\n\n<li>1.5 g pectine NH (ou g\u00e9latine)<\/li>\n\n\n\n<li>2 feuilles de basilic<\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<p>Chauffer la pur\u00e9e de fraises dans une casserole.<\/p>\n\n\n\n<p>M\u00e9langer le sucre et la pectine NH, puis verser sur les fraises.<\/p>\n\n\n\n<p>Apr\u00e8s \u00e9bullition, faire cuire le tout, \u00e0 feu moyen, en remuant pendant environ 1 minute.<\/p>\n\n\n\n<p>Ajouter les feuilles de basilic cisel\u00e9es.<\/p>\n\n\n\n<p>R\u00e9server eu frais pendant environ 15 minutes.<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" fraises<\/li>\n\n\n\n<li>Zeste de citron vert<\/li>\n\n\n\n<li>Quelques feuilles de basilic<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-montage\">Montage<\/h2>\n\n\n\n<p>Etaler le confit de fraises sur le sabl\u00e9.<\/p>\n\n\n\n<p>Puis pocher la cr\u00e8me au citron sur le dessus.<\/p>\n\n\n\n<p>Couper les fraises en quatre, puis les disposer sur la cr\u00e8me.<\/p>\n\n\n\n<p>Parsemer de zeste de citron vert, puis d\u00e9poser les feuilles de
